Chocolate cupcakes from a cake mix


Notes

  • This recipe is from My Baking Addiction. It's perfect for when you need to bake something quickly and don't have time/want to make cake from scratch.
  • I always try to use the Pillsbury Moist Supreme Devil's Food cake mix. It's nice and light and this, along with the espresso granules, creates a perfect chocolate base for all kinds of frosting.
  • Don't feel guilty for using a cake mix as your base! So many bakers do (you'd be surprised). 

ENHANCED CHOCOLATE CAKE MIX


INGREDIENTS

Cake

  • 1 box (15.25 ounce) chocolate cake mix
  • 1 (3.4 ounce) box chocolate instant pudding mix
  • 3 large eggs
  • 3/4 cup sour cream
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 tablespoon instant espresso granules dissolved in 1/2 cup warm water


DIRECTIONS

Cupcakes

  • Preheat oven to 350F.
  • Line cupcake pan.
  • Combine all ingredients in stand mixer and beat until combined.
  • Fill cupcake liners 2/3 full.
  • Bake 18-22 minutes (until toothpick comes out clean).
  • Remove from oven, wait about 10 minutes, and transfer cupcakes to wire rack to cool. Frost with your favorite buttercream or ganache.
